200g butter, softened
1 3/4 cups (370g) caster sugar
2 tsp vanilla bean paste
4 eggs
2 3/4 cups (405g) self-raising flour

Method

Preheat oven to 180°C. Line 24 1/3 cup (80ml) muffin pans with patty cases.

  1. Cream the butter, sugar and vanilla bean paste with an electric mixer. Add the eggs, one at a time, and beat until just combined. Add the flour and milk in alternate batches and stir with a wooden spoon until just combined.
  2. Spoon mixture evenly among the patty cases. Bake for 15-20 minutes or until cooked through. Remove from oven and transfer to a wire rack to cool completely.

Decorating
Ingredients:
Large white marshmallows
Mini white marshmallows
Tube of black Writing Icing
Butter Frosting:
stick butter, softened
2 1/2 cups powdered sugar, sieved
1 tbsp water
or a tub of ready prepared frosting
Method

  1. To make the butter frosting, sieve the powdered sugar. Beat the butter until creamy in an electric mixer, then gradually beat in the powdered sugar. Finally beat in the tablespoon of water.
  2. Spread a layer of butter frosting over the cupcakes using a palette knife and make a small mound of butter frosting in the centre.
  3. Place a large marshmallow in the centre of the cupcake for the sheep's face. Cut another large marshmallow in half horizontally and then in half again and stick these either side of the sheep's face to form the ears. The marshmallow ears will stick naturally as the cut side of the marshmallow is very sticky.
  4. Arrange some halved mini marshmallows on the top of the sheeps head.
  5. Cut the mini marshmallows in half arrange them in two circles around the edge of the cakes.
  6. Draw eyes and noses on the sheep's face using the black Writing Icing.
